We are currently looking for a talented Sous Chefs for multiple 4 & 5 star Hotels throughout Ireland (these include Cork, Dublin and Galway)
- Previous experience in a similar senior role within a 4-5*/AA/AAA property
- A creative flair and passion for cooking with local, fresh, seasonal and quality ingredients
- excellent management and organisational skills are essential
- HACCP Qualification to Management level
- Experience in managing a large team
- Ability to manage team and kitchen in the head Chefs absence flawlessly
- A progressive attitude towards training, developing and motivating the team
- An ability to lead by example within a fast-paced kitchen environment
- Assist in the design and delivery of new menu concepts which reflect customer demand
- Manage and oversee the smooth running of the day to day operation of the kitchen
- Maintain consistently high standards and quality across all areas of the food operation
- Understand the budget and work to the agreed targets on food cost, labour hours etc.
- Recruitment, training and retention of team members
- Management of the kitchen payroll on a weekly and monthly basis
- Set personal and department objectives for direct reports and to monitor and review on a regular basis.
